Bing Cherry Confiture: a perfect pairing

One of the great classic pairings of the Pyrenean Basque country is sheep’s milk cheese and cherries. Our Autumn offering brings this delicious union with Bing Cherry Confiture made by Lou Lou’s Garden in Escalon, California.

Lou Lou’s founder, Casey Havre, makes the confiture herself from Bing cherries grown by her family in northern San Joaquin County. She deliberately leaves the cherries in large chunks to retain as much of the flavor as possible, adding just a pinch of organic sugar and a healthy dose of Meyer lemon juice harvested from her own citrus grove at the edge of the cherry orchard.
