Breakfast & Cheese: Unexpected Combinations

As much as we love cheese, sometimes we forget about its deliciousness in the early hours of the morning, when we’re too tired to think of anything but typical breakfast staples like cereal, bagels, and eggs. But cheese is a great addition to your morning routine–eating cheese for breakfast even keeps cholesterol levels down, according to a French nutritionist.

Sure, it’s obvious to put cheese in an omelette or egg scramble–but we’ve discovered some unexpected cheesy treats that are perfect to start the day.

This grilled cheese recipe from She Knows is a delicious treat in the morning. Yes, grilled cheese for breakfast–we promise we’re not crazy! Runny egg, bacon, and sharp cheddar cheese between two buttered pieces of bread…are you drooling yet? It’s an amped-up version of a typical breakfast sandwich! If you prefer something on the sweeter side, this breakfast grilled cheese features brie, jam, and chocolate chunk egg bread.

Need to carb up? Eat some pancakes–with cheese. This recipe from The Kitchn combines creamy ricotta cheese with pancake batter for a light and fluffy breakfast.

Emma Christensen, contributor to The Kitchn, notes, “The ricotta isn’t something you necessarily taste — the pancakes definitely don’t taste “cheesy” — but rather, the ricotta adds a magical milky richness and creaminess to each bite. Don’t expect these to be quite like regular buttermilk pancakes. They’re more custard-like on the insides, reminding me of Dutch babies.”

And if you like a bit of citrus to perk up your breakfast, try these Orange-Ricotta Pancakes or Buckwheat Waffles with Ricotta and Citrus.
