Make the cake the night before, that way you won’t have to run the oven the same day you intend to make ice cream. Doing this lets the butter and cream cheese fully soak into the cake, ensuring the chunks that make it into the ice cream are evenly textured. Plus, it’s much easier to chop chilled cake into evenly-sized chunks.
