Refreshing Summer Cheeses


Homemade ricotta

Fresh mozzarella paired with tomatoes and basil is a classic summer dish, but there are so many other cheeses that shouldn’t be overlooked during the dog days. For example, feta’s tangy flavors pair well with crisp cucumbers, sweet peppers, and other seasonal veggies; fluffy ricotta makes for a great dessert when served alongside stone fruit like tart cherries or juicy peaches; and some would argue a summer pasta is simply incomplete without a hearty dusting of ricotta salata. The cheeses I crave most in summer are moist, fresh and light and never met a summer vegetable they didn’t like. With these cheeses driving the menu in the coming weeks, meat can take a back seat.
