February classes at Academie Opus Caseus in France
Acadamie Opus Caseus at Mons is currently accepting applications for their two-week winter residency and training program. The English-language classes integrate practical, hands-on experience in all major domains of the business with detailed classroom instruction.
Attending Academie Opus Caseus was a wonderful immersion in cheese that both deepened my knowledge and raised my respect for French cheese. The course is a great way to prepare for the ACS Certification Exam; Laurent explains cheese from pasture and animal to milk and differences in make process very logically, while working in the aging caves and tunnel for practical experience brings it all together!
