The factory is located in the medieval town of Scarperia, known historically for its high-quality knife production, where Leonardo Saladini has resuscitated the trade. Marcomini and Saladini envisioned tools created specifically for cutting and serving cheeses of all textures and sizes; our favorite is the double-handled Coltella knife,
but the set provides coverage for nearly any cuttingand- serving scenario at home. Each piece is crafted
from forged stainless steel and olive wood local to the region of production, and the lid of the pine
carrying case doubles as a sturdy cutting board and serving tray.
