The Amazing Wheels of Rodolphe Le Meunier
Some cheeses are famous for their pungent smell, others for their ash-rubbed exterior, but few for their unique shape. Doughnut-shaped cheeses (yup, with a hole in the middle) are perhaps one of the rarest curd forms available. Puits d’Astier is one of these cheeses, a sweet sheep's milk cheese aged by the budding, yet already well-known affineur Rodolphe Le Meunier.
Le Meunier, who is young and just starting his career, is about to become a household name – around cheese houses, anyway. “This is a new relationship for us,” Emilio Mignucci, vice president of culinary pioneering and co-owner, told me on a recent morning as we sampled Puits d’Astier over cups of tea (oui, tea). “Rodolphe’s affinage is exquisite.”
