Andante's Metronome is Music to Our Mouths
Mixed milks (both cow and goat) keep time together in Metronome, an enigmatic new offering from Petaluma's Andante Dairy.. Though presented in the pyramid shape traditionally reserved for French goat cheeses, Metronome invites us to leave all expectations behind, making way for an experience of subtle flavors, velvety texture and lots of personality: music to our mouths!
An enticing blend of cow and goat's milk, Metronome's firm texture yields near the edges for a rich, buttery creamline-- but what makes this cheese truly special is its paste. This cheese loves to float across your tongue like a sonata, smooth in its velvety personality but with enough clay-like texture to hold your attention.
