Behind the Scenes at New Glarus Brewery in Wisconsin
Extremely popular among Wisconsinites (it's the second most consumer beer in the state, just behind Miller Light), award-winning New Glarus Brewery unfortunately won't be expanding anytime soon. The folks behind New Glarus only offer their brews to locals, and plan on keeping it that way. Luckily, Serious Eats got a behind-the-scenes invitation, and is sharing it with all of us out-of-staters.
This mom-and-pop business is going through lots of growth—they opened a new 75,000 square-foot facility in 2009, which is capable of producing around 75,000 barrels per year. They are now planning on several more additions such as a fermentation center and a dedicated lambic brewing facility.
