Carolina Chevre

Paradox farms, a goat farm in West End, North Carolina, is producing chevre cheese that is gaining local fame for its freshness.

“To have chevre made in our county is truly phenomenal,” says farmers market regular Theresa Gagan of Southern Pines. Gagan has lived in Europe. “This chevre is mild, it reflects the surrounding ecosystem. Local foods taste like your area.”

Southern Whey, the new cheese aficionados’ shop in Southern Pines, sells out each Tuesday delivery. “People are always up for trying something made 15 miles from here,” says proprietor Susan Peters.
