Is Goat Cheese More Easily Digested?
Have you ever wondered why goat's milk cheeses are a little easier on the stomach? Lactose has no bearing on digestibility; in fact, it's possible for goat cheese to have more lactose than cow or sheep's milk cheeses. What really proves important is the size of the fat globules in the cheese, as a smaller fat globule will pass through the stomach lining more readily.
One consideration on behalf of goat milk, as well as sheep, as well as another species' milk, is the relative amounts of nutrients in the different milks. For example, a sheep milk cheese may have a little more vitamin B2, while a similarly made cow milk cheese may have more folic acid - a good argument for including a variety of cheese types in your week.
