Marin Cheesery Lays Down Some Funky Bleats
The San Francisco Chronicle takes us across the Golden Gate to Seana Doughty's Bleating Heart Creamery in West Marin and gives us a taste of her new mixed-milk cheese, Funky Bleats.
Doughty blended the raw goat's milk with her own raw sheep's milk and produced a washed-rind cheese that strikes me as truly original. The 2-pound wheel is 40 percent goat, 60 percent sheep and 100 percent delicious.The pale ivory interior, or paste, has an open texture with many small crevices. The aroma reminds me of yeast, aged beef, roasted peanut and barnyard, leaving an impression that Doughty terms "funky good."
