Gruyere has been to space! Granted, it was only a test, but it was a $100 million test. Wonder how it tasted after its journey?
The inventor of SpaceX and co-founder of Tesla Motors and PayPal stopped by Jimmy Kimmel Live last night and chatted about how he and his Dragon spacecraft crew sent a wheel of cheese to space as a test. It was the largest wheel of Gruyère cheese he could find at a Beverley Hills cheese shop. And no, he didn't taste-test it when it came back.
To trace the history of cheddar in the U.S. is to trace its reign over all other cheeses. From the mid 1800s to today, cheddar has remained one of the most popular cheeses in the country -- all while constantly evolving.
If the state of Wisconsin were to have one signature identifying symbol, it would likely be a chunk of cheddar. Crafted in blocks, barrels and wheels, and then cut, wrapped and stamped, millions of pounds of construction-orange Wisconsin cheddar are sold every year to American consumers.

The Oscars were last night, and Hollywood was dressed to the nines. That's great and all, but sometimes cheese likes to dress up, too! Check out these gorgeous rinds fit for the red carpet.
The Oscars always catch me unawares. Are they always in late February? Oh, sorry, I was busy running my finger through that last wheel of Rush Creek. But I can recover. Let’s recover together. We all know that the Oscars are about high style. Right away, I think: rinds. We need cheeses that look like brocade, rhinestones — something to compete with Bjork in a swan dress.

The snowy stuff from a can doesn't come close to homemade. DIY preserved Parmesan cheese has a more intense flavor, perfect for dusting on pasta, pizza or into the palm of your hand.
When I was a child I thought ‘Parmesan cheese’ was something that came out of a tube as a dried powder. Later in life I would discover the authentic product and swore off the powder. Until I made it myself.
It sounds fancy, but it's only a few ingredients and preparation styles away from being a pizza. But who cares? It tastes great! Whether you're hosting an luxurious luncheon or having a quiet dinner for two, this tart brings the flavor.
I won’t get into the nitty gritty here, but the point is: it worked. And all I had to do after that was blind bake it, remove it from the oven, fill it with Roquefort cheese and scallions…
…and pour on a mixture of egg yolks, whole eggs and heavy cream. When it came out of the oven, despite my less-than-perfect crust, it looked impressive. Aren’t you impressed?

This little dairy outside of Tallahassee has been producing its hand-made cheese (literally shaped by hand) for over seven years, and the popularity of its cheeses is quickly catching up with it. The dairy sells out of everything, so you better get there fast!
Cheese is far from a new discovery, but that doesn’t keep the owners of Sweet Grass Dairy from trying new things with it. Since 2005, Jessica and Jeremy Little have been operating the dairy farm located in Thomasville, Ga. They took over the family business, which was started by Jessica Little’s family — the Wehners. Business started out small, but has since greatly expanded, putting Sweet Grass on the map.
