This year, BelGioioso wanted to share some favorite traditional Italian dishes made with their award-winning artisan cheeses with the readers of culture. But they wanted to do more than that. They’ve invited bloggers to create new recipes that are a twist on the traditional five-course Italian meal. For each course, BelGioioso has provided a traditional recipe and a blogger has created a “Twist on Tradition” recipe, also using BelGioioso cheese. While Americans tend to think of pasta as the main course of an Italian meal, it is traditionally the second course. The serving is smaller, leaving you hungry for the meat course still to come. And while we tend to think of spaghetti slathered in tomato sauce, Italians use many different shapes of pasta and flavors of sauce to create this delicious course. This means that pasta can be matched to the season, with bright fresh flavors in spring and summer, and more rich and hearty ingredients in the autumn. Here are two classic Italian pasta recipes from BelGioioso and one twist on tradition pasta recipe from Dakota Mackey of Butter and Bunny.
