Artichoke Soup For The Cheese Lover’s Soul

Artichoke Cappuccino
Serves 4
An aromatic broth made with artichokes gets a luxurious topping of Grana Padano foam—an artichoke “cappuccino,” if you will. Rich and luxurious, these cups are lovely on a cold winter day. Serve as a light starter for an elegant dinner party, or sip anytime some comfort is needed.
  2. 4 big artichokes
  3. 2 ¼ cup chicken broth
  4. ½ cup white wine
  5. ½ cup Vermouth
  6. ⅔ cup shallots, diced
  7. ⅔ cup carrots
  8. 3 tablespoons butter
  9. 1 garlic clove
  10. 1 ½ cup cherry tomatoes
  11. 4 egg yolks
  13. FOR FOAM:
  14. ½ cup shallots, diced
  15. ½ cup white wine
  16. ½ cup milk
  17. 1 cup Grana Padano, grated
  18. 4 tablespoons crème fraiche or sour cream
  19. A pinch of minced garlic, optional
  20. Fresh truffle to garnish, optional
  1. Remove all the hard green leaves from the artichokes.
  2. In a large pot, make a broth out of the rest of the leaves and all the ingredients for the broth, apart from the egg yolks.
  3. In a separate pot, gently bring the white wine, milk, and shallots to a boil. Add garlic at this point, if desired. Cook for a few minutes, then sieve.
  4. To the sieved mixture, add the Grana Padano and crème fraiche (or sour cream) and whisk until foamy.
  5. Thinly slice the artichoke bottoms and fry in olive oil until golden.
  6. To serve, put an egg yolk in each glass and then fill with hot artichoke broth, followed by foam.
  7. Garnish with a sprinkle of grated Grana Padano and the artichoke chips. For added richness, shave fresh truffles on top.
