Bacon-Wrapped Dates with Goat Cheese

Bacon-Wrapped Dates with Montchevre Truffle Goat Cheese
This is the only appetizer you’ll ever need: sweet dates stuffed with Montchevre truffle goat cheese and cloaked in bacon, juicy with smoky, porky fat.
  1. 26 Medjool dates
  2. 4 oz truffle goat cheese from Montchevre
  3. 13 slices bacon (thinner slices work best)
  1. Preheat the oven to 400°F.
  2. Cut the bacon slices in half and set aside.
  3. Slice a lengthwise slit in one side of each date and pop out the pit.
  4. Spoon a ½ teaspoon of goat cheese into the dates, and close them up like a sub sandwich.
  5. Wrap each date with a half slice of bacon, pinching the bacon over the ends of the date to hold in the goat cheese. Pierce through the girth with a toothpick to secure.
  6. Arrange on the baking sheet, being careful not to overcrowd. Bake for 8 minutes.
  7. Flip each date and bake until crispy, about another 8-10 minutes. If they need more time, let them bake for another minute or so. Just watch to make sure they don’t burn.
  8. Place on top of a wire rack over paper towels and let drain for 5 minutes.
  9. Serve and enjoy.
