This recipe pulls together creamy avocado and rich Beemster Aged cheese with zesty lemon and peppery arugula. | Beemster is a cooperative of small family farms and cheese masters who have been honing their craft for three generations. Thanks to our unique terroir, our cheeses are rich and flavorful with a delectable texture through all ages. Beemster Aged is aged in historic cheese warehouses for 18 months. It’s a firm and smooth cheese with some crystallization throughout and notes of toasted almond and caramel.

Ingredients
  1. 1½ cups Beemster Aged (a.k.a. "Classic") cheese, shaved
  2. 1 fresh baguette, cut into ¼″-thick slices
  3. ¼ cup extra virgin olive oil
  4. 2 ripe avocados
  5. 1 lemon
  6. 1 shallot, diced small
  7. ½ bunch fresh flat-leaf parsley leaves, coarsely chopped
  8. 2 cups arugula
  9. Sea salt, to taste
  10. Lemon pepper, to taste
Instructions
  1. Heat oven to 375°F.
  2. Place baguette slices on a baking sheet and brush with olive oil. Bake for 8 minutes, or until golden brown and toasted.
  3. Halve and pit avocados, and scoop the flesh into a bowl. Squeeze lemon over avocado through a strainer, and mash mixture to a coarse puree.
  4. Add shallots and parsley, season with salt and lemon pepper, and mix to combine.
  5. Arrange a few leaves of arugula on the baguette slices and top with Beemster Aged "Classic," a dollop of avocado puree, and more cheese shavings. Finish with a dash of lemon pepper.
