Coach Farm Lemon-Honey Pear Cheese Dip

Coach Farm® Lemon-Honey Pear Cheese Dip
Serves 8
Sweet and zesty, with just the right amount of tang, this dip is absolutely irresistible!
  1. 1 pound whole milk ricotta
  2. 1 tablespoon unsalted butter
  3. ¼ cup sugar
  4. 1 large Anjou pear, finely diced
  5. 4 ounces Coach Farm® fresh goat cheese
  6. 2 tablespoons honey
  7. Zest of 1 lemon
  8. Juice of ½ lemon
  9. Dash of kosher salt
  10. Handful of chopped walnuts
  1. Strain whole milk ricotta to get out as much liquid as possible. Set aside.
  2. Heat butter in large skillet over medium heat. Add sugar and stir until dissolved. Add pears and cook until soft and golden, stirring occasionally. Set aside to cool.
  3. Preheat oven to 375ºF. In medium mixing bowl, mix together drained ricotta, goat cheese, honey, lemon zest, lemon juice, salt, and caramelized pears.
  4. Transfer mixture to baking dish and bake for 20 minutes. Top with chopped walnuts and bake another 8-10 minutes.
  5. Let cool for 10-15 minutes and enjoy! Serve with crostini or fruit slices.
