Coach Farm Vegetable Salad with Goat Cheese and Savory Italian Vinaigrette
Kick off the New Year with this light yet filling mix of everything delicious. Oh, and don’t forget the best part… Coach Farm's fresh goat cheese!
  1. Assorted Fresh Vegetables – we recommend using what is in season
  2. 1 Coach Farm fresh goat cheese disc (6 ounces)
  1. ½ cup distilled white vinegar
  2. ½ cup olive oil
  3. 2 teaspoons Italian seasoning
  4. ½ teaspoon dried oregano
  5. ½ teaspoon dried rosemary
  6. ½ clove of garlic, minced
  7. ½ teaspoon dried basil
  8. ½ teaspoon dried marjoram
  9. ½ teaspoon salt
  10. ¼ ground black pepper
  1. Chop fresh vegetables into 1 inch pieces and place into bowl.
  2. Whisk together the vinegar, olive oil, herbs, garlic, salt and pepper and put aside. Pour dressing over vegetables, toss and chill for at least four hours. When ready to serve, crumble Coach Farm fresh goat cheese over top of vegetables.
