GCDC's Mushroom Melt Grilled Cheese
The Mushroom Melt from GCDC is a gourmet grilled cheese filled with melted Taleggio, sautéed wild mushrooms, caramelized onions, and truffle oil on buttered wheat bread
  1. 1 medium sized white onion
  2. ½ cup Barbera wine (or other similar red)
  3. 2 tablespoons unsalted butter
  4. Fresh thyme, to taste
  5. 2 bay leaves
  6. Salt, to taste
  7. Ground black pepper, to taste
  1. 1 cup wild mushrooms
  2. ½ cup Barbera wine (or other similar red)
  3. 1 teaspoon vegetable oil
  4. 1 tablespoon chopped shallots
  5. 1 clove garlic, minced
  6. Fresh thyme, to taste
  7. Salt, to taste
  8. Ground black pepper, to taste
  1. Butter, as needed
  2. 2 slices whole wheat or Sourdough bread (GCDC gets theirs from Lyon Bakery)
  3. 3 ounces raw milk Taleggio, room temperature
  4. Drizzle of white truffle oil
  1. Sauté onion with half cup of Barbera wine, two tablespoons of unsalted butter, a bit of fresh thyme and a few bay leaves (with a pinch of salt and pepper) for 30 minutes, until caramelized.
  1. Marinate the mushrooms in the Barbera for 1 - 2 hours. Drain mushrooms, in a sauté pan, heat the vegetable oil over medium heat. Sauté the mushrooms with shallots, garlic, fresh thyme, and pinch of salt and pepper.
  2. Lightly butter the outside of one side of each slice of bread. Top the unbuttered side of one slice with the Taleggio, 1 oz of the caramelized onions, and 2 ounces of the sautéed wild mushrooms. Drizzle white truffle oil on top and close.
  3. Place the sandwich in a lightly buttered pan on medium heat. Cook the sandwich for approximately 3 minutes on each side, turning before burning. Press only once per side, if at all.
  4. Serve with extra-crispy tater tots (as GCDC does)!
