Kräuterflädle: Little ‘Herb Pancakes’ From Germany


Prosciutto di San Daniele and Grana Padano Stuffed German Herb Pancakes

Kräuterflädle are delicious German herb pancakes—thin and chewy like a French crepe but rolled with Prosciutto di San Danielle and rich Grana Padano, they are delicious with a refreshing coleslaw. Serve along with a German ale, or even enjoyed as a hearty lunch these pancakes are sure to be a treat to all.
Ingredients
  1. For Pancakes:
  2. 1 cup flour
  3. ½ cup milk
  4. 2 eggs
  5. 2 tsp chopped chives
  6. 2 tsp chopped parsley
  7. 2 tsp chopped dill
  8.  
  9. For Filling:
  10. 4 slices Prosciutto di San Daniele
  11. ¼ cup shaved Grana Padano
  12. 2 tbsp of cream cheese
  13. 2 tsp fried onions
  14. 2 cups sun-dried tomatoes
  15.  
  16. For Coleslaw:
  17. 1 small head white cabbage
  18. ½ red bell pepper
  19. 1 tbsp vinegar
  20. 1 tsp Dijon mustard
  21. 2 tsp extra-virgin olive oil
  22. 1 pinch of sugar
  23. Salt to taste
Instructions
  1. Mix all ingredients together for the pancake batter and proceed to cook the pancakes in a little butter. The batter will be thin and the pancakes should appear like crepes. Keep warm.
  2. Spread the pancakes with cream cheese and sprinkle with the fried onions. Add sun-dried tomatoes and cover with Prosciutto di San Daniele.
  3. Roll the stuffed pancakes and heat in the oven for a few minutes. As a garnish add shaved Grana Padano.
  4. Thinly slice the cabbage. Cut the red pepper in cubes and mix with the cabbage. Add the olive oil, vinegar, mustard, a pinch of salt and sugar and mix into a salad.
  5. Serve the pancakes with a little coleslaw on the side.
