Kryssos Feta & Watermelon Skewers
A perfect recipe for your next cookout, these skewers combine sweet watermelon, tangy feta, and cool mint flavors for a tasty summer appetizer.
- 4 ounce block Kyrssos feta cheese, cut into bite-size cubes
- ¼ large watermelon, cut into bite-szed cubes
- Mint leaves
- Kalamata olives, pitted
- ½ cup balsamic vinegar
- Stack the feta, watermelon, and olives with a mint leaf in between each. Pierce the stack with a wooden skewer or toothpick.
- Add balsamic vinegar to a small saucepan and reduce for 3-5 minutes until thickened. Drizzle balsamic reduction over skewers and serve.
