Montchevré Summer Flatbread
A quick and easy recipe that's fresh and light yet satisfying for all your guests, this summer flatbread is a perfect blend of fresh summer vegetables topped with creamy goat cheese crumbles that will have you wanting more. Serve it as an appetizer or make it an entrée with a fresh soup or salad.

Feel free to use pre-made flatbread dough if you don't have the time to make from scratch.
    1. 3½ cups flour
    2. 1 teaspoon kosher salt
    3. 1 teaspoon sugar
    4. 1 packet dry yeast
    5. 2 tablespoons olive oil
    6. 1½ cup of water
    1. 6 baby zucchini, peeled and cut into thin slices
    2. 1½ cups halved cherry tomatoes
    3. ½ cup diced chives
    4. Olive oil, for drizzling
    5. Salt and pepper, to taste
    6. 6 basil leaves
    7. 1-2 tablespoons balsamic vinegar
    8. 4 ounces Montchevré Crumbled Goat Cheese
    1. Combine flour, salt, sugar, and yeast in large bowl. Add water and 2 tablespoons olive oil, and mix together. Knead dough on floured surface for 3 minutes, then transfer back to bowl, coat in olive oil, and let rest for 1 hour.
    2. Heat oven to 425°F.
    3. Work dough into a rough oval or rectangle, and transfer to greased baking sheet. Drizzle a coat of olive oil on the dough, and place zuchinni, tomatoes, and chives on top. Add salt and pepper to your liking.
    4. Bake 11-15 minutes, until crust is golden brown. Top with fresh basil leaves, crumbled goat cheese, and vinegar.
