  1. 1 sheet puff pastry, 12 in x 8 in

  3. 8 slices Prosciutto di San Daniele
  4. 2 egg yolks
  5. Black pepper, to taste

  2. Using a pastry brush, coat the whole sheet of puff pastry in egg yolk.
  3. Evenly scatter Grana Padano over the entire sheet and season with pepper (and a little nutmeg, if wanted). Place sheet in the freezer for 30 minutes or until firm.
  4. When firm, cut across widthwise at ½ inch intervals.
  5. Twist each strand and place onto another tray, keeping a 1-1 ½ inch space between each one.
  6. Bake for 20 minutes, or until golden and crisp.
  7. Allow to cool on a wire rack, then wrap each one in a slice of Prosciutto di San Daniele, covering ⅔ of the stick.

Grana Padano

Grana Padano cheese has been a part of Italy's proud gastronomic heritage for nearly 1000 years. A staple in Italian cuisine, it has become the world's best-selling PDO cheese. It has a fine grainy structure and a mellow, tasty, yet never overpowering, flavor, and can be found aged between 9 months to over 24 months. Grana Padano possesses unique nutritional features and is naturally lactose free due to its production characteristics and the long ageing process.
