Pumpkin Spice Season Is Here!

Pumpkin Spice Cupcakes

We are fast approaching fall, which means it is almost pumpkin spice season! Nothing screams fall more than a pumpkin spice pastry, so be the first to kick off the season by baking the perfect Pumpkin Spice Cupcakes.
  1. For the Cupcakes
  2. 1 cup flour
  3. 2 eggs
  4. 1 tsp pumpkin pie spice
  5. 1 tsp baking powder
  6. 1/2 tsp baking soda
  7. 1/2 tsp salt
  8. 1/2 tsp cinnamon
  9. 1 cup pumpkin puree
  10. 1/2 cup butter
  11. 1/2 cup sugar
  12. 1/2 cup brown sugar, packed
  13. For the Frosting
  14. 6 tbsp butter, softened
  15. 4 oz cream cheese, softened
  16. 2 cups powdered sugar (more as needed)
  17. 1/2 tsp vanilla
  18. 1 1/2 tsp cinnamon
  1. For the Cupcakes
  2. Preheat oven to 350 degrees. Prepare muffin tins with paper liners. Mix flour, pumpkin pie spice, baking powder, baking soda, salt and cinnamon in a large bowl and set aside.
  3. In a separate bowl, combine pumpkin puree, sugar, brown sugar, butter and eggs and mix well. Fold in dry ingredient mixture. Scoop into prepared muffin tins, filling 3/4 full. Bake 18-20 minutes or until toothpick comes out clean. Allow to cool while you prepare the frosting.
  4. For the Frosting
  5. Beat butter and cream cheese until light and fluffy. Add powdered sugar slowly until fluffy. Beat in vanilla and cinnamon. If necessary, add more powdered sugar until frosting holds its shape.
  6. Frost cupcakes and top with a sprinkle of cinnamon if desired.
