Risotto-Stuffed Peppers with Président Feta

Président Feta Crumbles and Risotto-Stuffed Peppers

  2. 2 cups Arborio or carnaroli rice
  3. 1 tablespoon olive oil
  4. ½ onion, finely diced
  5. 1 cup white wine
  6. 6 cups vegetable stock
  7. 2 tablespoons butter
  8. ½ cup parmesan cheese, grated
  9. Pinch saffron
  12. 6 ounce package Président Feta Crumbles
  13. 12 piquillo peppers
  14. ¼ cup extra virgin olive oil
  15. 6 garlic cloves, freshly shaved
  16. 1 onion, julienned
  17. 15 cherry tomatoes
  18. 1 cup white wine
  19. 2 bunches kale
  20. Oregano, to taste
  21. Red chili flakes, to taste
  1. SAFFRON RISOTTO: Simmer the vegetable stock with saffron. On medium heat, sweat the onion with no color for 3 minutes.
  2. Add the rice, and toast for 1 minute. Then add the white wine. Slowly add stock to the rice, ladle by ladle, stirring continuously. After 10-12 minutes, the rice should be al dente but not mushy.
  3. Add the butter and cheese, and check for seasoning.
  4. Chill the risotto in the refrigerator.
  6. STUFFED PEPPERS: Preheat the oven to 400°F. Drain and remove the seeds from the piquillos, then spoon in about 1 tablespoon saffron risotto into each pepper.
  7. In a cast-iron skillet, warm the onion, garlic and chili in olive oil on medium for 2-3 minutes, until toasted. Add the tomatoes, kale, and stuffed piquillo peppers. Cook on the stovetop for about 7 minutes. Add the white wine to deglaze and cook until dry.
  8. Place the mixture in the 400°F oven for 8-10 minutes, until the vegetables have softened and the rice is warm.
  9. Top with Président Feta Crumbles and oregano.
  1. TIP: If you can’t find Arborio or carnaroli rice, jasmine rice can work as a substitute.
