Sweet Potato Cupcakes with La Bonne Vie Honey–Goat Cheese Frosting

This perfect cupcake recipe captures the flavors of fall in one dessert. The sweet potato cupcakes have a mild sweetness that complement the tang of the goat cheese and sweetness of the honey.

Ingredients
    Cupcakes
    1. ¼ cup canned sweet potato
    2. ⅛ teaspoon baking soda
    3. ⅛ teaspoon baking powder
    4. ¼ teaspoon vanilla
    5. 1 egg yolk
    6. ½ cup flour
    7. 6 tablespoons sugar
    8. ⅛ teaspoon salt
    9. ½ teaspoon cinnamon
    10. 2 tablespoons unsalted butter, at room temperature
    Honey–Goat Cheese Frosting
    1. 3 ounces La Bonne Vie goat cheese, at room temperature
    2. 1 tablespoon unsalted butter, at room temperature
    3. 1½ tablespoons honey
    Instructions
      Cupcakes
      1. Preheat oven to 350°F, and prepare 4 muffin tins.
      2. In a small bowl mix the canned sweet potato, baking soda, and baking powder. Mix in vanilla and egg yolk, and set aside.
      3. In another bowl whisk the flour, sugar, and salt together. Add the butter and half the sweet potato mixture, and beat until light and fluffy. Add the remaining sweet potato mixture & beat a few more seconds.
      4. Put 1 heaping tablespoon of the batter in each muffin tin, smooth out to flatten.
      5. Bake for 23 minutes or until golden brown and a toothpick inserted into the center comes out clean. Allow to cool on a rack completely before frosting.
      Honey–Goat Cheese Frosting
      1. Put all frosting ingredients in a bowl and beat with a mixer until smooth and creamy.
      2. Spread with a knife or pipe with a pastry bag to top the cupcakes.
