Loaded Baked Potatoes

Cathedral City Cheddar

Ingredients
  

  • 3-4 russet potatoes cut in half (you want to end up with about 2 ½ cups potato)
  • 1 cup shredded cheese
  • ½ cup milk
  • ¼ cup sour cream
  • 2 TBSP butter melted
  • 3 scallions chopped
  • Bacon cooked and chopped
  • Olive oil
  • Salt
  • Pepper

Instructions
 

  • ► Preheat oven to 400. Coat potato halves in olive oil and place cut side up on a baking sheet. Bake for 55 min – 1 hr.
  • ► Remove from oven. Scoop out the inside of the potatoes, leaving the skin as a shell. Combine the potato with ¾ cup of the shredded cheese, milk, sour cream and melted butter and stir until well incorporated. Season to taste. Place the mixture back into the potato skins, sprinkle with remaining cheese and return to the oven. Broil for 4-5 minutes.
  • ► Top with chives and bacon.
