Brillat-Savarin Cheesecake with Mango and Passion Fruit

With a cheese as creamy and popular as Brillat-Savarin, it’s actually a surprise no one has turned it into a cheesecake until now. Topped with bright mango and passion fruit, this dessert is one that will wow your guests. While it is no-bake (the heat would destroy the integrity of the cheese), take your time with this one; as with many baking ventures, it’s a bit of a science experiment (and a deliciously rewarding one, at that).

The combination of velvety smoothness and intense creaminess of fresh Brillat-Savarin cheese sandwiched between a passion fruit glaze and a thin crumb crust is absolutely gorgeous. Further enhanced by a mango puree, serve this dessert when you’re ready to say goodbye to winter.
