Dogfish Head is Releasing a Wasabi-Laced IPA Called Rosabi


Heat seekers and spice lovers, get ready! “Off-centered” Delaware brewery Dogfish Head is releasing a new beer dubbed “Rosabi,” and it’s made with (you guessed it) — wasabi. The brew is an IPA brewed with Simcoe and Centennial hops, Munich and Caramel malts, and Louisiana red rice — a nod to the ale’s co-collaborater, Bayou State musician Julianna Barwick. Spicy, hoppy beers are notoriously difficult to pair with cheese, but we’ll still give it a shot when Rosabi is released this June.

The funky brew was created in collaboration with musician Julianna Barwick, who even grated the fresh wasabi herself for a preliminary test batch. But that’s not where the collaboration ends. A limited-edition run of 1000 six-bottle cases will include Barwick’s four-song EP Barwick that uses samples of sounds from Dogfish’s recently unveiled 200-barrel brewhouse. (For drinkers who aren’t interested in post-modern soundscapes, there will also be 750ml single bottles available starting June 1.)
