  1. Whole grain bread (rolls work best)
  2. Aged yellow cheddar (low-fat)
  3. Not-too-ripe Roma tomato
  4. Red onion
  5. Fresh baby spinach
  6. Garlic powder
  7. Cracked black pepper
  8. Drizzle of extra-virgin olive oil
  9. Pinch of sea salt or kosher salt (optional)
  10. Sliced fresh mozzarella
Instructions
  1. Layer accordingly and place on non-stick sprayed pan. Weigh down panini-style with heavy skillet, roughly 3-5 mins each side on medium-high heat. Serve and enjoy!
