Fan Photo: Wood-n’t you like some cheese?

This week’s fan photo winner is Pauline L., who posted her gnarly pic of pecorino aged “in fossa,” or in a pit. This practice, which dates as far back as the 15th century, involves wrapping cheeses in cloth bags before placing them in a sealed hay-lined pit to age. In the case of the pecorino pictured above, the resulting cheese resembles the wooden cutting board it sits atop. We wish we could have been there to try it!
