London native Rab Brownell is a chef and has a master’s degree in food policy. His first foray into the world of cheese was at Neal’s Yard Dairy’s Borough Market shop, which allowed him to visit farms and cheesemakers across the UK. He moved to New York City in 2017 and worked behind various cheese counters before rejoining Neal’s Yard Dairy in their US export operation.
