Since debuting in 2008, Gourmage has been a South Texas destination for artisan cheese. Now under the watchful eye of Stephanie Richardson, who purchased it in 2010, the store entices customers with unique products like “cheese cakes” (wheels stacked in tiers) and blue cheese-dark chocolate truffles. A small café features dishes crafted from Richardson’s robust selection—don’t miss gourmet grilled cheese sandwiches and Gorgonzola ice cream with candied walnuts. Classes in mozzarella-making and pairing (even packaged items such as Cheetos matched with wine) round out Gourmage’s offerings.
culture: What’s the smelliest cheese in your shop?
Stephanie Richardson: At this moment, Chimay. People love it.
culture: Favorite dishes on your café menu?
SR: Definitely our mac and cheese, which changes every week. One of the most popular combinations has been chili mac and cheese—topped with cheddar, of course!
culture: Any offbeat flavor combinations you adore?
SR: I don’t know if it’s weird, but blue cheese and caramel or blue cheese and gingersnaps are two of my favorites.
culture: What’s your favorite wine and cheese pairing?
SR: Pretty much any cheese and any wine is what I want to say! Based on the contents of my fridge: Taleggio with Gewürztraminer.
