What does a cheesemaker need to do to call his cheeses “organic”?
A
To produce a cheese labeled “organic” according to the United States Department of Agriculture, a cheesemaker must use certified organic ingredients (milk, rennet, animal feed) throughout the make process. At Liberty Heights Fresh, we look for products that have been certified organic by a third party or agency (such as California Certified Organic Farmers, Oregon Tilth, or Demeter USA) with standards that exceed the USDA definition of organic.
