Soumaintrain Cheese

Soumaintrain is a farmhouse cheese made with cow's milk in the Burgundy region of France.

Cheeses are soft and allowed to drain naturally during production. Affinage takes about six to eight weeks, during which time cheeses are regularly brushed with a solution of brine and Marc de Bourgogne. During maturation, the quantity of Marc de Bourgogne is increased until the final result is a rich and very tasty cheese with a distinctly orange colored, aromatic and sticky rind.

An excellent cheese for the winter months, Soumaintrain is occasionally eaten young, when the cheese simply consists of a mild, white paste.

The texture is close and fine. With age, flavors are powerful and rich, with sweet, salty and creamy milk notes.

Since Soumaintrain is a washed rind cheese in the stinky category, the creamy yellow paste will run at room temperature. To help protect the cheese, it usually comes in a round wooden box.
