New in Charcuterie: Lady Edison Pork’s Little Shorty Ham


The American country ham brand introduces a new product, just in time for holiday charcuterie boards

 

Little Shorty is the newest meat on the block from Good Food Award-winning Lady Edison Pork, a country ham company rooted in North Carolina whole-hog cooking. It joins Jinhua Style Ham and 24-month aged Extra Fancy Country Ham as part of the brand’s offerings.

Aged for under six months, Little Shorty carries Lady Edison’s traditional North Carolina cure, dialed down to highlight a softer, more versatile profile. The texture is tender, showcasing sweetness and saltiness equally—approachable, but not timid. It’s designed for chefs, specialty retailers, and home cooks who want a ham that’s milder and more adaptable for an everyday bite or meal.

“We created Little Shorty for folks who crave the flavor of a real country ham but want a little less intensity than a long-aged ham,” says Karrie Kimble, a Lady Edison partner. “It’s still our traditional North Carolina cure—just aged to spotlight a softer personality. Think of it as the gateway ham for people who want to fall in love with country ham.”

Appalachian Mountain-cured in Boone, North Carolina, Little Shorty continues the region’s craftsmanship legacy. It’s a nod to tradition that behaves like a modern pantry staple; layer it in sandwiches, drape it across charcuterie boards, or use it in other culinary applications for extra depth of flavor.
