Burrata might look like an unassuming ball of mozzarella, but this pasta filata beauty is hiding a dramatic, oozing interior. First created in the 1920s, it originated in the southern city of Andria, in the “heel” of Italy’s boot.

Burrata, whose name comes from the word burro, or butter, was originally created to use up scraps from the mozzarella make process. Production begins the same way, but the stretched curd is instead made into a pouch that’s filled with stracciatella, or shreds of mozzarella mixed with heavy cream. This pouch is then sealed and tied into a knot at the top, giving the ball its signature look.

This fresh cheese pairs well with simple and flavorful olive oil drizzles, salty meats like prosciutto, and sweet fruits like peaches, figs, and tomatoes. Popular across the globe, burrata brings main character energy to everyday favorites like pizza, pasta, and salad. The texture of its firm outer layer contrasted with its milky, spreadable interior makes even the most simple dish seem luxurious.
