Grapefruit Tarragon Soda


Grapefruit Tarragon Soda

There’s something unexpected and delightful about the combination of grapefruit and tarragon. The flavors are tart but not too tart, sweet but not too sweet, with the tarragon lacing every sip. Serve at brunch—and if you’re feeling racy, leave out the ice and swap the soda water for prosecco.

Ingredients
  

  • 1 ½ cups fresh grapefruit juice from 2 medium grapefruits
  • ¾ cup tarragon simple syrup
  • 2 cups soda water divided
  • 1 pink grapefruit quarter thinly sliced (optional)
  • 4 tarragon sprigs to garnish

Instructions
 

  • Combine the grapefruit juice, tarragon simple syrup, 1½ cups of the soda water, and the grapefruit slices (if using) in a quart-size pitcher, and stir to combine.
  • Fill 4 pint glasses halfway with ice. Divide grapefruit mixture equally among the glasses, and top each with remaining soda water. Garnish with tarragon sprigs.
