Oaxaca Queso Fundido Reipe


A bubbling skillet of melted queso Oaxaca topped with savory chorizo—simple, crowd-pleasing, and perfect for sharing. Served with warm tortillas, this classic Mexican appetizer delivers bold flavor with minimal effort and is ideal for parties, tailgates, or weeknight snacking.

Queso Fundido

Ingredients
  

Base

  • 9 ounces pork chorizo casings removed
  • 1 small onion diced
  • 1 jalapeño seeded and diced

Cheese Layer

  • 14 ounces queso Oaxaca grated

To Serve

  • Cilantro optional
  • Warm corn tortillas

Instructions
 

Base

  • Cook chorizo in an oven-safe skillet until browned, breaking it apart. Add onion and jalapeño and cook until onions turn translucent. Drain excess fat. Reserve one-third of the mixture.

Cheese Layer

  • Spread queso Oaxaca evenly over the skillet mixture. Top with reserved chorizo. Heat at 400°F until cheese bubbles.

To Serve

  • Garnish with cilantro and serve hot with tortillas.
