Mashed Potato, Cheddar, and Chive Waffles


Who says waffles have to be sweet? These magical treats come from leftover mashed potatoes, and would be perfect as a fried egg vehicle or even sandwich bread. And they’re topped with cheese, naturally.

The batter has a few potato chunks. Perfect. I like to cook the waffles so they bake up as slightly uneven rounds. Cheese comes in after the waffles are baked in the iron. Yessss….
