Roasted Pumpkin and Smoked Blue Cheese Lasagna


Hold on to your kitchen table seats — this lasagna is a powerhouse of flavor. Not only is there earthy, roasted pumpkin to satisfy your fall craving, but there’s smoky, pungent blue cheese, too. Better save this one for a vegetarian Thanksgiving option.

Two things to note about this recipe. Cubing a pumpkin is kind of a pain but once you get in a rhythm, the process goes rather quickly. Also, if you can’t find smoked blue cheese, go with your other favorite cheese: I think gorgonzola or goat cheese would be delicious in this lasagna.
