Sartori is at it again. The Wisconsin cheese company recently released a new flavor: Citrus Ginger BellaVitano. Like others in the acclaimed BellaVitano line, its paste is moist, crumbly, and sweet, while the rind is rubbed with aromatic orange, onion, tomato, and ginger, among other seasonings. The surprisingly umami character boasts a strong sweet-andsalty backbone—dynamite with a simple, bright wheat beer.
