Treasure Hunting: The Search May Be Worth It for Freya’s Wheel


Freya's Wheel cheese

Named for a Norse god of love and beauty, Freya’s Wheel is the newest addition and first commercial aged cheese offering from Briar Hill Creamery. Recalling tastes of TicklemoreCaerphilly, and Garrotxa, small-batch production and limited commercial offering have created a buzz among in-the-know Bay Area cheese hounds, and this washed-rind goat cheese certainly lives up to the hype for many folks.

The interior resembles Ticklemore or Caerphilly, with two distinct layers: a firm, dryish, brittle core surrounded by a darker, creamier band, about a half-inch wide, just under the rind.
