Humboldt Fog Haze Remix is Cypress Grove’s 2017 riff on a goat’s milk classic. Fans of the famous fromage might already be familiar with Humboldt Fog’s clean-yet-tangy white paste and signature horizon line inspired by the northern California landscape. But Haze Remix is an amped up approach, with herbaceous elements added to the slab’s distinctive ribbon of ash.

Laced with a layer of lavender and hand-harvested fennel pollen, expect yeasty, grassy aromas and a citrusy, herbal flavor as this bloomy soft-ripened cheese settles on the palate. Like the original, Haze Remix is pure white when young, with a dense, slightly crumbly texture. With age, the paste breaks down below the rind, growing translucent and runny, and flavors intensify.
