From the Alpine Meadows to Your Table: Monti Trentini’s Artisanal Cheeses Rooted in the Trentino And Veneto Tradition

For nearly a century, the Finco Family has been crafting authentic Italian cheeses in the heart of North East Italy. The first cheesemaker was Florindo Finco who started the journey in 1925 and now the Finco family’s commitment to artisanal cheesemaking has passed through four generations. The family founded Monti Trentini in 1985 and today, Monti Trentini combines time-honored practices with modern technology, creating exceptional cheeses that capture the essence of Italy’s mountainous landscapes.

At the forefront of their offerings is a selection of aged cheeses like Asiago Vecchio and Malghe di Vezzena, prized for their complex flavors. Aged in carefully controlled environments, each cheese develops its unique character, reflecting the family’s dedication to quality and tradition. For those looking for something adventurous, Monti Trentini’s Aged Truffle Cheese offers a bold, earthy profile, pairing beautifully with wines and cured meats. When it comes to pairing, Monti Trentini’s cheeses shine alongside Italian wines. Asiago Vecchio, with its intense, savory notes, complements the bold fruitiness of a Teroldego or Lagrein. For the Aged Truffle Cheese, try a robust Barolo or earthy Nebbiolo to match the truffle’s deep, aromatic complexity. These pairings celebrate the harmony between Italian wines and cheeses, enhancing each bite and sip with complementary flavors.

Monti Trentini’s cheeses are deeply influenced by the unique territory of the Trentino and the Dolomites. Known for its lush pastures, clean air, and pristine water sources from mountain streams, this territory provides an ideal environment for high-quality dairy production. The diverse flora in the valleys’ alpine meadows imparts distinct flavors to the milk, which translates beautifully into Monti Trentini’s cheeses. This connection to the land allows each wheel of cheese to embody the essence of the region, preserving the flavors of Italy’s alpine heritage.

Monti Trentini has close relationships with 140 farmers in its territory. An inspiring example of Monti Trentini’s partnerships is the Borgogno farm, managed by Walter, who inherited traditional values from their family. Located in a small mountain village, Walter’s farm prioritizes animal welfare and sustainable practices, enhancing the quality of the milk. This commitment to local relationships and the land’s natural richness imbues Monti Trentini cheeses with unique flavors reflective of the Italian mountains.

Monti Trentini

For over 100 years, Monti Trentini has crafted exceptional cheeses rooted in tradition, innovation, and family values. Using milk from cows grazing in the Dolomites and nearby rangelands, they create over 50 varieties, including Asiago PDO, Grana Padano PDO, and regional specialties. Every step—from milk collection to aging and packaging—happens in-house, ensuring quality and authenticity.
