This week’s fan photo winner is Winter C., who shared her photo of Sea Change, the newest cheese out of Connecticut-based The Mystic Cheese Company. The yeast-ripened cow’s milk cheese is made in a recycled shipping container and aged for nine days to develop a doughy flavor and lactic tang. Sea Change, named for a passage in Shakespeare’s The Tempest, is inspired by styles found in the foothills of northwest Italy and uses über fresh milk—usually less than 30 minutes after milking.
