  • A scientific breakthrough will allow soundwaves to examine cheese ripeness without damaging the wheels themselves. Researchers in Uruguay are using the technique of “cheese tapping” on an industrial level using an Emmental-style cheese, where machines will determine when it’s ripe at the perfect time, without sacrificing a single bite. 
  • In lab-made cheese news: Legendairy Foods raised $4.7 million from a group of European investors. They’ve already produced mozzarella and ricotta prototypes, and these funds will allow them to explore the production of other animal-milk-free cheeses.  
  • Atlanta Mayor Keisha Lance Bottoms tweeted a photo of her infamous mac and cheese again this year, following last holiday season’s viral controversy. After the internet critiqued her dish saying it was dry, the mayor retorted with a mouth-watering photo saying, “and my Mac N Cheese is STILL good.” 
  • A conflict between a cheesemaker and his neighbors who complained about his stinky products was brought to court in Germany. Lucky for the business owner in question, the protestors were told to end their campaign and deal with the smell. Wake up and smell the käse, people.
