This #WashieWednesday, wake up and smell the flowers with the botanical beauty Burwash Rose. For this semi-soft raw milk creation, East Sussex-based Traditional Cheese Dairy Company took cues from the British monastic cheeses of centuries ago: Raw milk from grassfed cows is aged over eight weeks, then washed in English rosewater.

The resulting round is a lovely little wheel with a sticky blush-orange rind and a distinctive rose aroma. Burwash Rose’s interior is just as seductive; it’s delicate, creamy, and silky, with a buttery flavor that blossoms on the palate and floral notes.

Pair Burwash Rose with a sweet but slightly spicy chili jam and a piece of sourdough to turn up the heat on date night. (For an even more sumptuous treat, pop the wheel in the oven as you might a baked brie.) While Gewurtztraminer and riesling make our short list for pairings, a robust red or a dark beer will suit this washie just fine.
