Tzatziki Sauce


Tzatziki Sauce

This sauce is a wonderful way to balance a spicy element in a falafel pita sandwich, such as a spicy cilantro sauce. It’s also great for dipping toasted pita wedges or vegetables into as a snack or dressing a fresh tomato salad.

Ingredients
  

  • 1 English cucumber peeled, seeded, and grated
  • 2 tablespoons coarse salt
  • cups plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic finely minced
  • 1 tablespoon chopped fresh dill
  • Salt to taste
  • Cayenne pepper to taste

Instructions
 

  • Line a colander with a double layer of cheesecloth. Add the grated cucumber and the salt and toss together. Place the colander over a bowl and allow to drain for 4 hours. After 4 hours, rinse the cucumber in fresh water, place on a triple layer of paper towels, and ring the rinse water out..
  • Combine the cucumber, yogurt, lemon, garlic, dill, salt, and cayenne in a medium bowl. Stir until well combined. Refrigerate until serving.
